Weeknight Chickpea Curry

Serves 4 · 30 min · Dinner

Ingredients

Yellow onion – 1, diced

Garlic – 3 cloves — be generous

Chickpeas – 2 cans, drained

Coconut milk – 1 can, full-fat

Baby spinach – 2 large handfuls

Method

Soften the onion in oil over medium heat, then add the garlic and spices.

Add chickpeas and coconut milk; simmer until it thickens.

Low and slow here — ten minutes makes the sauce.

Stir the spinach through to wilt. Finish with lime.
